12 oz elbow Macaroni uncooked
¼ tsp Salt
¼ tsp Black pepper ground
2 tbsp Dijon mustard
1 cup Mayonnaise
3 Dill pickles medium, chopped
½ Red onion medium, chopped
2 ribs Celery chopped
½ cup Black olives sliced
½ tsp Smoked Paprika
1 tbsp Chives chopped

This Deviled Egg Macaroni Salad is an interesting take on the classic deviled egg appetizer served at gatherings and parties. Who doesn’t love a hard boiled egg filled with a savory, spicy paste made by mixing the hard-boiled egg yolk with mayo and mustard with paprika sprinkled on top?

This salad is really easy to make too. Start by shelling hard boiled eggs and scooping out the yolks. Cook the macaroni. Drain once cooked. Make a deviled egg yolk dressing by mixing yolks, mayo and mustard. Assemble the salad by mixing all the ingredients together. Garnish with a sprinkle of paprika and some chopped chives. Enjoy!

Steps to make Deviled Egg Macaroni Salad

Cook macaroni

Follow the package directions to cook the macaroni. according to the package instructions. Drain the water and rinse with cold water and set to one side.

Prepare eggs

Remove the shells from 8 hard boiled eggs. Chop the eggs in half and scoop out the egg yolks using a teaspoon. Place the egg yolks in a medium mixing bowl. Chop the egg whites and set aside.

Make egg yolk dressing

Use a fork to mash the egg yolks. Season to taste with salt and pepper. Combine 2 tablespoons of mustard and 1 cup of mayo with the mashed egg yolks. Mix well until fully combined.

Assemble salad

Place the cooked macaroni in a large salad bowl. Add the egg yolk mixture, the chopped egg whites, 2 chopped dill pickles, ½ a medium red onion, 2 chopped ribs of celery, ½ a cup of black olives and ½ a teaspoon of paprika. Stir until fully combined.

Taste and adjust seasoning if required.

Serve garnished with a sprinkle of paprika and chopped chives.
