A trip to Tuscany a few years ago inspired this 20-Minute Tuscan Tortellini with Sausage dish. I was served a rustic, wholesome bowl of this delicious pasta in a taverna in Tuscany, and I just had to make my own version!
To make this dish, start by sauteing onion and garlic. Add Italian sausage and cook while breaking up. Once semi-cooked, combine with the onion and garlic mixture. Add tomato sauce, diced tomatoes with juices, broth, and half/half. Stir and simmer. Add the tortellini and stir well until the tortellini is submerged in the sauce. Cover and simmer until tender. Stir in spinach and freshly ground black pepper. Serve immediately with freshly shredded Parmesan cheese.
To make my 20-Minute Tuscan Tortellini with Sausage, you will need the following ingredients:
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add 1 small chopped onion and stir constantly for 30 seconds. Add 4 chopped cloves of garlic and stir for 2 more minutes or until aromatic and softened.
Push the cooked onion mixture to the edges of the skillet. Add 1 pound of sausage to the center of the pan and cook while breaking with a wooden spoon. Once half-cooked, mix with the onion mixture and continue to cook until browned.
Add 2 cups of tomato sauce, 1 can of diced tomatoes with juices, 2 cups of broth, and ½ cup of half/half. Stir together and bring to a simmer.
Add 19 ounces of frozen tortellini and stir to submerge the pasta in the sauce. Place a lid on the pan and simmer for 7-8 minutes, until tender.
Remove the pan from the heat and carefully stir in 3 cups of spinach. When the spinach is just wilted, season with freshly ground black pepper to taste.
Serve immediately with freshly shaved Parmesan cheese.
