Preheat the oven

Preheat the oven to 375° F. Lightly spray or grease a 7,5x5.5 inch baking dish with oil.

Bake the fruit

Lay the banana slices in the dish in a single layer. Scatter half of the berries over the top along with a pinch of the cinnamon and 1 tablespoon of the honey. Cover the tray with foil and bake in th over for 15 minutes.

Combine the dry ingredients

Add the oats, baking powder, the rest of the cinnamon, half of the nuts, and salt in a bowl.

Combine the wet ingredients

In another bowl, whisk the rest of the honey, egg, milk and vanilla extract together.

Combine the oatmeal

Take the bananas out of the oven and pour the oats evenly over the top. Pour the milk mixture on top of this, making sure everything is evenly distributed. Scatter the rest of the berries and nuts over and return to the oven.

Bake the oatmeal

Bake for half an hour or until the top has turned a golden brown color and the oatmeal is firm to the touch.

Go easy on the vanilla extra or the taste will be awful.. i accidently added a tbsp instead of tsp cause i read it wrong and the whole thing was ruined.

Brown sugar and coconut milk is the way to go for this recipe taste a lot better and the brown sugar makes it slightly less sweet.
