This Cajun-Stuffed Chicken is a dish that I make each year without fail for my annual New Orleans inspired Mardi Gras feast. I love to gather a bunch of my oldest friends and family together to eat delicious food and to celebrate the spirit of the New Orleans carnival even if we are not there in person.
This stuffed cajun chicken is a fabulously simple dish when entertaining guests as you can prepare it in advance and simply throw it in a preheated oven for about 25 minutes before you are ready to serve.
To make Cajun-Stuffed Chicken, you will need the following ingredients:
Preheat the oven to 350 °F.
Heat two tablespoons of olive oil in a large ovenproof skillet.
Place onions and peppers in the skillet and sauté for 5 minutes until soft. Season to taste with salt and pepper before removing the skillet from the heat and leaving it to cool slightly.
Cut a pocket in each chicken breast using a sharp paring knife.
Divide the vegetable mixture between each chicken breast and top with cheddar.
Sprinkle the chicken generously with Cajun seasoning, salt, and pepper.
Arrange the chicken breasts in the skillet and bake in the oven for about 25 minutes until the meat is cooked through.
Serve alongside some red cabbage or veggies of your choice. Enjoy!
