This Cajun-Stuffed Chicken is a dish that I make each year without fail for my annual New Orleans inspired Mardi Gras feast. I love to gather a bunch of my oldest friends and family together to eat delicious food and to celebrate the spirit of the New Orleans carnival even if we are not there in person.
This stuffed cajun chicken is a fabulously simple dish when entertaining guests as you can prepare it in advance and simply throw it in a preheated oven for about 25 minutes before you are ready to serve.

Really delicious even added some sundried tomatos to the inside of it too.
Nicely made the bell pepper makes it a bit tangy and spicy and the cajun seasoning makes the meat flavorful without waiting an hour for the seasoning to soak in.
Oh my god it's sooo good I made less than 4 breast though just for myself haha.

Instead of cheddar cheese I used goat cheese cause I'm lactose intolherant, really yummy.
Goes great with some brown rice and a little bit of squeezed lemon or lime juice on the top, would recommend.

It was alright but bell pepper overpowered the chicken flavor.
Perfect! I made this and some bread pudding for dessert too, both go great with white wine.
Much prefer the cajun pasta it's way more filling than this and you don't need a second thing with it.
