Love fritters? Then you’re going to really love these Cheesy Chicken Fritters which are so moreish. I like to serve these fritters with a homemade garlic aioli. They really are hard to beat!
To make these, I mix diced chicken with eggs, mayo, flour, shredded mozzarella, dill, salt and black pepper. Using a large spoon, I drop spoonfuls of the fritter mixture into a pan with hot oil and cook the fritters.
To make Cheesy Chicken Fritters, you will need the following ingredients:
Dice the chicken into ⅓ inch thick pieces using a sharp knife. Place the chicken pieces in a large mixing bowl.
Add the eggs, mayo, flour, shredded mozzarella, dill, salt and black pepper to taste. Mix the mixture until well combined. Cover and place in the refrigerator for 2 hours or overnight.
Heat the oil in a large pan or skillet over medium heat.
When the oil is hot, add a heaped tablespoon of batter for each fritter. Flatten the top of each with the spoon. Cook for 3-4 minutes until the underside is golden brown. Turn and cook the other side of the fritter for 3 more minutes.
Combine mayonnaise, garlic and lemon juice in a small bowl. Season to taste with salt and black pepper. Mix well to combine fully.
Serve these fritters hot with garlic aioli for dipping.
