For the chicken fritters
- 1 ½ lbs Chicken Breastapprox 3 large breasts
- 2 Large eggs
- ⅓ cup Mayonaise
- ⅓ cup All-purpose flouror cornstarch or potato starch for gluten free
- 4 oz Mozzarella1 ⅓ cups shredded
- 1 ½ tbsp Fresh dillchopped
- ½ tsp Saltor to taste
- ⅛ tsp Black pepper
- 2 tbsp Olive oil
For the garlic aioli dip (optional)
- ⅓ cup Mayonaise
- 1 clove Garlicpressed
- ½ tbsp Lemon juice
- ¼ tsp Salt
- ⅛ tsp Black pepper

Love fritters? Then you’re going to really love these Cheesy Chicken Fritters which are so moreish. I like to serve these fritters with a homemade garlic aioli. They really are hard to beat!
To make these, I mix diced chicken with eggs, mayo, flour, shredded mozzarella, dill, salt and black pepper. Using a large spoon, I drop spoonfuls of the fritter mixture into a pan with hot oil and cook the fritters.
