This recipe serves for quaint and dainty personal size Cherry Galettes that are just perfect for your next home-style tea party! A butter crumble crust filled with fresh cherry syrup-type jelly and baked in the oven making delicious cherry pies.

To make Cherry Galettes, you will need the following ingredients:
In a medium bowl, combine flour, salt and butter and cut into small pieces with a light beat until mixture is crumbly.
In a separate bowl whisk together the sour cream, ice water and lemon juice.
Combine the wet and dry ingredients with spoon until dough starts sticking together. Without overworking, use your hands to knead it a few times, you still want to see distinct pieces of butter. Form the dough into a ball.
Cover the dough ball with plastic wrap and refrigerate for at least 1 hour.
Preheat oven to 400 °F.
Split the dough equally into 4 pieces. Place the other 3 pieces in the fridges while you work your first galette.
Roll out the dough to a 7-8-inch diameter.
In a bowl mix the cherries, sugar, cornstarch, lemon juice and salt together for the filling.
Spoon ½ cup of the filling into the center of the pie crust and fold the edges over so that each fold overlaps neatly over the next fold. Repeat steps 7-9 for each 3 pieces of dough. Transfer each galette to a baking pan lined with parchment payment.
In a small bowl whisk together eggs and water. Using a pastry brush, brush the egg-wash over the dough.
Bake galettes in preheated oven for 30-35 minutes until golden brown.
All to cool for 5-10 minutes before serving and eating.
