I love this tasty Cherry Upside-Down Cake because it gives me a reason to buy cherries from my local farmer’s market! If I plan to make this upside-down cherry cake, I always buy extra cherries so that I have some to snack on while I cook! I advise you to do this too!
As well as tasting really delicious, this cherry upside-down cake recipe is very easy to make! Start by softening the cherries in a saucepan with caramelized sugar and red wine. Make a batter by combining flour, butter, sugar, baking powder, eggs, salt and milk. Place the cherries in the bottom of a baking pan and top with the cake batter. Bake in the oven until golden brown on top. Leave to cool slightly before turning the cake out onto your favorite serving plate.
To make Cherry Upside-Down Cake, you will need the following ingredients:
Preheat the oven to 350 ºF. Grease a springform pan with butter.
Rinse 300 grams of cherries. Drain them and remove the pits. Caramelize 50 grams of sugar in a small saucepan. Add the rinsed cherries to the caramel and deglaze the saucepan with 100 milliliters of red wine. Simmer over medium heat for 5-7 minutes.
Place 400 grams of pastry flour, 200 grams of softened butter, 150 grams of sugar, 1 packet of baking powder, 5 eggs, 1 teaspoon of salt and 200 milliliters of milk in a mixing bowl. Mix with an electric handheld mixer until you have a smooth batter.
Place the softened cherries at the bottom of the baking pan and spread out evenly. Pour the batter over the cherries and smooth using the back of a spoon or a frosting spatula.
Bake in the oven for about 35-40 minutes, until a toothpick inserted comes out clean.
Leave the cake to cool in the pan for a few minutes before turning out onto a cake plate.
Serve slices of this cake with coffee or tea on the side.

I personally think the cake it way too sweet even for a cake, best way to change that for next time is to replace cane white sugar with brown and add a bit of lemon zest.
