Who doesn’t love Deluxe Mac and Cheese for Two. Personally when I am not pounding away all the meaty meals that I love, this recipe is one of my favorites and I’ve yet to find something more delicious.
It’s hard to change my mind about meat-free dinners but this one does hit a soft spot with me. Creamy, tangy, sticky, melt cheese is one of life’s extra special indulgences that I really enjoy!

Preheat oven to 375 °F and lightly grease a 7x5-inch baking dish.
In a medium pot of salted, boiling water cook macaroni pasta according to package directions until al dente. Drain from liquid and set aside.
In a medium pot over medium heat, melt butter and add flour. Cooking while whisking continuously for about 30 seconds - 1 minute.
Pour in milk and continue cooking while continuously whisking for about 3-5 minutes until thickened and bubbling.
Add ⅔ Cheddar and ⅔ Parmesan cheese. Stir to mix through until smooth.
Season with generous amounts of cayenne, nutmeg, salt and pepper, to taste.
Transfer cooked pasta to prepared baking dish and pour the cheese sauce over. Stir to combine well. Top with remaining Cheddar and Parmesan cheese.
In a medium bowl, coat bread cubes with melted butter and cover mac and cheese with soaked bread cubes. You may bake on a separate baking sheet if your baking dish is too full and add topping later.
Bake for 10-15 minutes until bread is toasted and crispy on top.
