My kids recently asked for Mother’s Day brunch ideas they could cook for their mom. I wanted to give them a recipe that is delicious, but easy to bring together too: it had to be Easy Frittata. This is my easy healthy frittata recipe that even kids can perfect!
To make this easy frittata recipe, start by whisking up a mixture of eggs, cream and mozzarella cheese. For the easy frittata filling, you can use shallot, garlic, mushroom and spinach like I do or you can go wild and add ingredients like bacon, sausage, tomatoes, broccoli or bell pepper. Let your imagination run wild!
To make Easy Frittata, you will need the following ingredients:
Preheat the oven to 375 °F.
Whisk 8 large eggs together in a bowl with ⅓ cup of cream and ¾ cup of mozzarella cheese. Season to taste with salt, pepper, and a pinch of red pepper.
In a large ovenproof skillet, sauté 1 minced shallot and 3 minced cloves of garlic. Cook for five minutes until soft.
Add 8 ounces of sliced mushrooms to the skillet and cook for five minutes more until soft.
Add 3 cups of spinach and cook for 2 minutes until wilted. Season to taste with salt and pepper.
Pour the whisked egg mixture into the skillet and spoon ½ a cup of ricotta on top.
Transfer the skillet to the oven and bake for 12 minutes until the eggs are just set.
Serve immediately sprinkled with freshly chopped herbs if you have some.
