A delicious work lunch – I love to make this Pasta with Sautéed Peppers, Zucchini and Smoked Mozzarella. It’s filled with everything nutritious that I need for that quick, grab-n-go, middle of the day dish. You can meal prep for the week using your favorite pasta with colorful, small bell peppers, sautéed with zucchini slices and topped with grated, Smoked Mozzarella and fresh torn basil leaves. Quick and ready to eat!

    Cook peppers and onions

    In a large skillet over medium-high heat, melt the butter and oil and add the peppers and onions. Season with salt and pepper to taste and cook, stirring continuously for 10-12 minutes until softened.
