This Pasta with Tomatoes, Zucchini, and Pesto is one of my go-to quick meals. I love the punchy flavor the pesto brings to the dish. In this recipe I use bocconcini which are small mozzarella cheese balls. If you can’t find bocconcini, you can substitute with a normal mozzarella ball, torn into bite sized chunks.
To make this pasta dish, I start by cooking up some fettuccine and corn. Then I mix up tomatoes with pesto, zucchini and bocconcini cheese. I mix these together with the cooked pasta and sprinkle fresh basil on top for a pasta dish which is fresh and full of Italian flavor.
To make my Pasta with Tomatoes, Zucchini, and Pesto, you will need the following ingredients:
Follow the package instructions to cook the pasta. Add the corn for the last two minutes of cooking time. Drain the pasta and return to the pot. Reserve ¾ cup of cooking water.
Using a box grater, grate the zucchini. Turn occasionally to grate the outside of the vegetable and discard the soft core in the middle.
Mix the tomatoes, olive oil and 2 tablespoons of the pesto together. Season with salt and pepper to taste.
Add the zucchini and bocconcini cheese and stir well.
Mix the pasta with the remaining pesto and ¼ cup of the reserved pasta water. If it seems too dry, add some more water until you reach the desired consistency.
Stir through the tomato-zucchini mixture.
Sprinkle some torn fresh basil leaves to garnish.
