These Pastelitos de Dulce de Leche are little pastries filled with a creamy caramel filling known as dulce de leche. These bite size morsels are simply to die for and with the dulce de leche oozing out with each mouthful, it will be hard to stop after just one! Baked in the oven, any leaked caramel turns into a toffee-like crust and its so good. Serve as a dessert with ice cream or on a stick, simply for the fun of it!
To make Pastelitos de Dulce de Leche, you will need the following ingredients:
In a food processor, pulse the flour, salt and sugar together until combined.
Add butter and cream cheese and pulse a few more times until batter starts to stick together.
Add vanilla and pulse twice.
Remove dough and roll into a ball shape. Cover in plastic wrap and place in the refrigerator for at least 2 hours to overnight to chill.
Roll out dough onto a lightly floured surface, about ¼ - ⅛-inches and slice into 2-inch squares with a sharp knife.
Add a drop of dulce de leche (a little less than a teaspoon size) into the center of each square. Use a wet finger to run it around the edges of the pastry squares.
Using another pastry square, place over and pull the sides to sandwich, closed. Repeat until all squares have “tops.” Trim edges so that each square is perfect.
Place in the refrigerator for at least 1 hour to chill.
Preheat oven to 350 °F.
In a small bowl, mix the brown sugar and cinnamon together.
In a separate small bowl, whisk egg yolk with a small teaspoon of water.
Using a fork, press into the edges of the squares, all the way around then brush with egg wash and sprinkle with cinnamon-sugar mix.
Bake for 10-12 minutes until puffed and golden.
Serve and enjoy!
