Perfect Vegan Corn on the Cob is not as hard to make as you might think and I’m here to give you the secret! I’m giving you the dairy free version of my perfect corn on the cob in this recipe, but you can easily adapt this by using standard butter if you prefer.
I start by grilling the corn on a hot grill pan or skillet until it is evenly charred. As you grill them, they might smoke and crackle but this is normal. Then I make a compound butter which is a mixture of butter and supplementary ingredients. I place the compound butter in the bottom of a baking dish and finish the corn in the oven.
To make Perfect Corn on the Cob, you will need the following ingredients:
Preheat the oven to 350 °F.
Drizzle the oil over the corn and spread it over the cobs using your hands or a pastry brush.
Place a grill pan or skillet on high heat. Drizzle some of the oil into the pan to coat the bottom and add the corn. Grill and turn the corn occasionally until both ears are evenly charred.
Combine the butter, fresh herbs, lemon zest. Season with sea salt and freshly ground pepper to taste.
At the bottom of a baking dish, spread the butter slightly and place the grilled corn on top. Cover the dish with aluminum foil.
Cook the corn in the oven for 5-10 minutes until the kernels are tender. Shake the dish occasionally so that the corn is fully coated with the melted herb butter.
Serve the corn on a platter, sprinkled with sea salt, pepper and the reserved fresh herbs. Serve the remaining melted butter in a small jug on the side.
