This Red Lentil & Chorizo Soup is a real winner in my house. We are big chorizo fans in my family. Chorizo is a Spanish sausage made from pork meat and lots of spices including paprika. These spices give it its intense flavor and color. I love to add it to soups and stews for an unbeatable depth of flavor.
Start this soup by frying chorizo until it is crispy. Fry onion, carrots, garlic and cumin seeds in the chorizo oil before adding paprika, sugar and vinegar. Add lentils, tomatoes and chicken stock and simmer until the lentils are tender. Blend and serve garnished with yogurt, olive oil, crispy cooked chorizo and a sprinkle of paprika. Enjoy!
To make the Red Lentil & Chorizo Soup, you will need the following ingredients:
Place 1 tablespoon of oil in a large saucepan. Fry the chorizo in the hot oil until crisp. Remove the crispy chorizo with a slotted spoon and place it in a bowl. Reserve the cooking oils in the pan.
Sauté a large chopped onion, 2 chopped carrots and a pinch of cumin seeds for 10 minutes. When they are soft and glistening, add the garlic and sauté for another minute.
Sprinkle 1 teaspoon of paprika over the vegetables and add a pinch of golden caster sugar. Continue to cook for another minute before adding a dash of red wine vinegar.
Stir in 250g of lentils. Pour 2 cans of tomatoes and 850ml of chicken stock over the mixture.
Simmer the soup for 30 minutes until the lentils are soft and tender.
Blend the soup in a food processor or with a handheld blender until smooth but with some chunks.
Serve the soup in large bowl, garnished with a dollop of yogurt and a drizzle of olive oil. Scatter the cooked chorizo on top and add a sprinkle of paprika.
