1 pouch (3 oz) liquid Fruit pectin

Rose Petal Honey

Not many people think of roses as an edible treat, but I love the subtle flavor of rose petals in this Rose Petal Honey. To make this honey, you will only need 5 ingredients – rose petals, water, lemon juice, sugar and pectin.

Start by combining rose petals, water and lemon juice and bring to a boil. Once the petals lose their color, strain the mixture and reserve the liquid. Discard the petals and stir in sugar to the liquid. Bring to a boil and stir in pectin. Pour into a jar and cool to room temperature before covering and chilling in the refrigerator for up to 3 weeks.

Steps to make Rose Petal Honey

Bring rose petals, water and lemon juice to a boil

Place 1 cup of rose petals, 1 cup of water and 2 tablespoons of lemon juice in a large saucepan. Stir to combine and bring to a boil.

Simmer

Reduce the heat and simmer, uncovered, until the petals no longer have any color. Strain the mixture and return the liquid to the saucepan. Discard the rose petals.

Add sugar and boil

Add 6 tablespoons of sugar and bring the rose honey to a boil over high heat.

Stir in pectin

Stir in 1 pouch of pectin and continue to boil for a minute, stirring constantly.

Pour into a jar

Pour the rose honey into a jar and leave to cool.

Serve

Cover and store in the refrigerator for up to 3 weeks.
