Meet the perfect Rustic Strawberry Almond Galette for any and all occasions. At first glance, this galette may look like every other galette you’ve had, but it has a secret. Between the jammy strawberries and flaky pastry is a bonus layer of almond and spice base you didn’t know you needed until now. This base does double duty here – it prevents the pastry from getting soggy and also makes a nice contrast to the bubbling fruit filling. Perfection.
This strawberry galette is so simple that you can make it within the hour. Mix the dry ingredients, then add in the butter until it’s in a small pea-size. Add in the egg, lemon juice, and iced water and pulse until just combined. Pour the dough onto a floured surface and shape it into a ball. The dough is easy to work with, and you can roll it right away without having to chill it. Toss the strawberries with lemon juice and prepare the almond base. Assemble the galette, then brush the crust with an egg wash and sprinkle with crushed pistachios. Bake until the crust is golden brown. Serve with a side of ice cream.
To make the Rustic Strawberry Almond Galette, you will need the following ingredients:
Preheat the oven to 400 °F.
In a food processor, combine 1 ½ cups all-purpose flour and ¼ teaspoon salt.
Add 1 ½ sticks cold cubed butter and pulse just until the butter is broken up into pea-sized pieces.
Add 1 egg, 2 teaspoons lemon juice, and 1 tablespoon iced water and pulse until just clumping together. If the mixture is dry, pulse in up to 2 more tablespoons of ice water, 1 tablespoon at a time.
Pour the dough onto a lightly floured surface and shape into a ball, making sure not to overwork the dough.
Roll the dough out on a piece of parchment paper that is the same size as your baking sheet until it is 11-12 inches round. Transfer the parchment paper and dough to the baking sheet and place in the refrigerator while you prepare the filling.
In a large bowl, toss the halved strawberries with 4 teaspoons lemon juice and set aside.
In a separate bowl, mix together 4 tablespoons sugar, ¼ teaspoon cinnamon, 6 teaspoons cornstarch, ½ cup ground almonds, and a pinch of salt.
Remove the dough from the fridge and transfer it to another baking sheet. Spread the almond mixture onto the center of the dough leaving a 1 ½-inch border.
Layer the strawberries on top and sprinkle with the remaining 1 tablespoon sugar.
Brush the inner border of the dough with the egg wash.
Fold the pastry over the filling and brush the outer part of the dough with egg wash.
Sprinkle with 2 tablespoons crushed pistachios.
Bake for 35-40 minutes or until the crust is golden brown. Let cool for at least 10 minutes before serving.
Slice and serve.
