If your family is big into seafood then this Shrimp Orzo with Feta recipe is going to be a real hit! It’s not often that you’ll find me designing recipes without red meat somewhere in the list of ingredients but I do enjoy shrimp and other shellfish, almost with the same sort of passion.
This recipe is quick and easy and a safe dinner that just can’t go wrong!
To make Shrimp Orzo with Feta, you will need the following ingredients:
Cook 1¼ cups of whole-wheat orzo according to package instructions. Once cooked, drain orzo, set aside and keep warm.
Meanwhile, in a large skillet over medium heat, heat 2 tablespoons of olive oil and add 2 cloves of minced garlic. Cook while tossing for about 1 minute until fragrant.
Add 2 medium chopped tomatoes with 2 tablespoons of lemon juice and bring the skillet to a boil.
Once boiling, add about 1¼ pounds of uncooked shrimp and stir through. Reduce the heat and simmer, uncovered for about 4 minutes until shrimp is pink in color and cooked.
Add cooked orzo to the mixture in the skillet along with 2 tablespoons of freshly chopped cilantro and ¼ teaspoon of pepper. Cook until heated through.
Sprinkle with feta cheese and serve!
