A fresh and healthy Spinach-Tomato Macaroni & Cheese that is made for the whole family. A great way to get in some nutritious vegetables like tomatoes and spinach by incorporating them into everyone’s most loved pasta dish – macaroni and cheese.
Cook the macaroni, spinach mixture and garlic-onion tomatoes separately then mix them together with freshly made cheese sauce, bake it all together in the oven and voila, mac ‘n cheese to perfection.
To make Spinach-Tomato Macaroni & Cheese, you will need the following ingredients:
Preheat oven to 350 °F.
Cook macaroni according to the package instructions, leaving out the salt, then drain and set aside.
In a large skillet over medium-high heat, heat oil and add onion, garlic and ¼ tsp salt and cook, stirring continuously for 3-4 minutes until softened and tender.
Gradually add spinach with 1 tablespoon of water at a time, if needed, and cook until wilted. Remove from heat and transfer the mixture to a large bowl.
Over a medium-high heat, add tomatoes to the skillet and cook for about 1 minute until softened. Once cooked, remove from heat and add to the spinach mix in the bowl.
In the same skillet, reduce the heat to medium and melt the butter. Add flour, pepper and remaining ½ teaspoon salt and whisk together. Cook, continuously whisking for 2 minutes.
Gradually add the milk and broth and continue cooking while whisking for 1-2 minutes until thickened and bubbling.
Add ¾ cup cheese and continue whisking until melted.
Add the cooked macaroni and the cheese sauce to the spinach mix in the bowl and mix together, well.
Transfer the spinach-tomato macaroni to a 2 quarts baking dish and sprinkle with the remaining ¼ cup cheese.
Bake in the preheated oven for 10-15 minutes, until the cheese has melted.
Remove from the oven and enjoy hot!
