I love to make a batch of these Strawberry Oatmeal Muffins as a special breakfast treat. They are a great breakfast to have when you are in a hurry or they are a healthy and nutritious snack to beat hunger pangs.
To make these muffins, start by mixing wet ingredients together well. Combine the dry ingredients in a large bowl and toss the strawberries in flour in a small bowl. Mix the wet and dry ingredients and fold in the strawberries. Bake the muffins in the oven for 20 minutes. Remove them from the oven and leave to cool completely on a cooling rack before eating.
To make Strawberry Oatmeal Muffins, you will need the following ingredients:
Preheat the oven to 400 °F.
Combine 1 cup of quick-cooking oats with ½ a cup of brown sugar, 1 cup of Greek yogurt, ⅓ cup of oil and 1 beaten egg in a medium bowl and mix together very well. Set to one side for 5 minutes.
In a separate bowl, mix together 1 cup all-purpose flour, ½ a teaspoon of salt, 1 teaspoon of baking powder and ½ a teaspoon of baking soda.
In a separate small bowl, mix the strawberries with 1-2 tablespoons of flour.
Pour the wet mixture into the bowl with the dry mixture and stir until they are just combined. Do not use a whisk - it’s ok if the batter is lumpy.
Gently fold in the strawberries.
Divide the batter between each cup in lined with paper liners muffin tin. Fill each one about ¾ full.
Bake for about 20 minutes until a toothpick inserted comes out clean.
Allow the muffins to cool completely on a wire rack.
Serve as a quick breakfast on the run or as a filling and delicious snack.
