I am always ready for a heart bowl of soup and by adding your favorite veg only makes this soup more suited to your taste buds. With low cholesterol ingredients this soup is packed with a bunch of nutrients, short on calories and big on flavor.
To make The Yummiest Vegetable Soup, you will need the following ingredients:
In a large Dutch oven over medium-low heat, heat oil and add onion, garlic and a teaspoon of salt. Cook for about 8 minutes.
Add carrots, celery, potatoes and cook for 5 minutes, stirring a couple times during the cook.
Add Italian seasoning spice and cook for another minute.
Add broth, water, tomatoes, corn, beans, bay leaf, and a few sprinkles of ground pepper.
Bring everything to a boil then reduce heat to low and cover pot with lid. Simmer on low heat for about 35 minutes until vegetables are soft.
Once veg have softened, remove from heat and add parsley and lemon juice. Stir through to combine.
Remove bay leaf bits and season with salt and pepper to suit your tastes.
Serve hot and enjoy!
