Ingredients

1 large Cucumber chopped
1 pt Cherry tomatoes halved
½ cup Feta cheese crumbled
1 can Chickpeas drained and rinsed
½ Onion chopped
¼ cup Olive oil extra-virgin
2 tbsp Red wine vinegar
Kosher Salt to taste
Black pepper freshly ground, to taste
2 tbsp Cilantro fresh, chopped

This Tomato, Cucumber and Feta Salad is my kids’ salad and I am so happy to have found a recipe that encourages them to eat vegetables.

I think it’s the crunchy cucumbers, the sweet cherry tomatoes and the crumbly feta cheese. It’s perfect in summer when we’re sitting at the pool, and you can guarantee there are watermelon triangles featured too!

Steps to make Healthy Tomato, Cucumber and Feta Salad

Prepare salad

In a large salad serving bowl, mix the cucumber, tomato, chickpeas and onion.
Top with feta and cilantro and serve.

Prepare dressing

In a small bowl, combine the oil and vinegar and season with salt and pepper. Mix well.

Dress salad

Gently toss the dressing over the cucumber salad, to coat.

Serve

Garnish with the feta and cilantro and serve!
