This Tomato, Cucumber and Feta Salad is my kids’ salad and I am so happy to have found a recipe that encourages them to eat vegetables.
I think it’s the crunchy cucumbers, the sweet cherry tomatoes and the crumbly feta cheese. It’s perfect in summer when we’re sitting at the pool, and you can guarantee there are watermelon triangles featured too!
To make Tomato, Cucumber and Feta Salad, you will need the following ingredients:
In a large salad serving bowl, mix the cucumber, tomato, chickpeas and onion.
Top with feta and cilantro and serve.
In a small bowl, combine the oil and vinegar and season with salt and pepper. Mix well.
Gently toss the dressing over the cucumber salad, to coat.
Garnish with the feta and cilantro and serve!
This Tomato, Cucumber and Feta Salad is the perfect family, summer at the poolside recipe, to serve. This salad is cool and refreshing and a winner among all and you should try it too! We’d love to hear from you! Tag #cookmerecipes in your summer pics and posts.
