This Vegan Italian Split Pea Stew is such a healthy and wholesome stew that is packed full of flavor and healthy vegetables. This recipe includes my favorite vegetable – cauliflower. It is gorgeous, and I know you’ll love it!
To make this stew, start by heating olive oil in a large saucepan and sautéing onion, celery and carrots, and cook until the onions are soft. Add the garlic and Italian seasoning, and cook for 1 minute. Stir in split peas, vegetable broth, and water and bring the mixture to a boil. Simmer until the peas are just tender and stir in cauliflower. Continue to simmer before adding diced tomatoes. Season with salt and pepper, and stir in the parsley. Taste and adjust seasoning before serving.
To make Vegan Italian Split Pea Cauliflower Stew, you will need the following ingredients:
Heat 2 teaspoons of olive oil in a large saucepan or Dutch oven. Saute 1 chopped onion, 1 large chopped celery stalk, and 2 diced carrots. Cook for 5 minutes until the onion softens.
Add 2 minced garlic cloves and Italian seasoning and continue to saute for a minute.
Add 1 cup of split peas, 2 cups of vegetable broth, and 2 ½ cups of water to the pot and stir well.
Bring the soup to a boil and simmer for 45 minutes until the split peas are tender.
Mix in 3 cups of cauliflower and simmer for 15 minutes.
Add ¾ cup of diced tomatoes and cook for 5 minutes. Season to taste with salt and pepper, and stir in ¼ cup of minced parsley.
Before serving, taste and adjust seasoning.
