1 tbsp Olive oil
1/4 tsp Salt
1/4 tsp Black pepper freshly ground
1 tsp Balsamic vinegar
For whipped ricotta:
1 (15-oz) container Ricotta cheese
For serving:
1/2 cup Basil fresh torn leaves
Honey for drizzling
Bread french baguette, or other good-quality bread, sliced and toasted

Prepare cherries

Place the cherries on a baking sheet in an even layer and roast for 15 minutes. Remove and set aside to cool.

In the meantime, place 15 ounces ricotta in a food processor. Purée for 2-3 minutes or until very creamy.
