Using whole-wheat flour, brown sugar and Greek yogurt as substitutes to the usual white flour and white sugar combination used for baking. I love to use delicious fresh apricots when they’re in season for a chewy and sweet touch with grated fresh ginger for some spice!

Preheat oven and prepare baking pan

Preheat oven to 350 °F. Lightly grease a 10x5x3-inch loaf pan with butter and flour.

Combine dry ingredients

In a medium bowl sift the flour, baking powder, baking soda, and salt and mix to combine. Set aside.

Combine wet ingredients

In a separate bowl whisk the sugar and eggs together then gently stir in the Greek yogurt and vanilla extract.

Bring bowl together

In a mixing bowl, combine the wet ingredients and the dry ingredients together.

Add apricots

Fold in the apricot chunks and grated ginger, make sure the cake batter is well blended. Do not overmix.

Pour cake batter into the prepared baking pan. Bake for 50 minutes until a wooden stick inserted into the center comes out clean.

Remove from the oven and cool in the baking pan for 5 minutes then remove from the pan to cool on a wire rack.
