Recipe Description

These incredibly easy-to-make Apricot Oat Bars come together in a food processor in about 5 minutes. Made with fresh apricots, oats, flour, brown sugar, and butter, the bars are simple and utterly delicious. They have the perfect balance of sweet and tart, crispy and chewy to brighten your day!

In your food processor, combine the dry ingredients (except for the oats) and butter. Make sure the butter is super cold. Pulse briefly until the butter is cut to pea-size. Now, add the oats and pulse the mixture a few more times just until the oats are mixed in. Transfer about ¾ of the prepared mixture into a parchment-lined square pan and press down into an even layer. Next, add a layer of sliced apricots. Finally, pulse the remaining oat mixture until small crumbs form, and sprinkle the mixture over the apricots. Bake until the top is golden brown. Let cool completely before slicing into bars. Serve and enjoy!

    Combine 1 ⅔ cups all-purpose flour, 1 ⅔ cups rolled oats, 1 cup packed brown sugar, ½ teaspoon salt, ¼ teaspoon baking soda, and 12 tablespoons butter.
