2-3 Bagels day-old, cut into bite-size pieces
1 Bell pepper chopped
¾ cup Cherry tomatoes quartered
6 slices Bacon cooked, chopped
6 Large eggs
1 cup Whole milk
1 cup Cheddar cheese
½ tsp ground Mustard
¼ tsp Salt
⅛ tsp Black pepper freshly ground
6 oz Cream Cheese cut into bite-size pieces
Optional for garnish
Seasoning mix poppy seeds, sesame seeds, dried garlic, coarse salt

I love a breakfast casserole and this Everything Bagel Breakfast Casserole is one of my favorites. I don’t know about you, but I adore everything bagel seasoning! Usually, the seasoning mix is made from sesame and poppy seeds, dried garlic and onion and salt. This flavor combination elevates the humble breakfast casserole to a meal fit for a king!

Start this casserole by layering bagel pieces, bell pepper, tomatoes and bacon in a greased casserole dish. Make an egg mixture by whisking the eggs, milk, cheese, ground mustard, salt and pepper together in a large bowl. Pour the egg mixture over bagel mixture and top with cream cheese and everything bagel seasoning. Bake in the oven and sprinkle with chopped scallions to serve.

Steps to make Everything Bagel Breakfast Casserole

Heat oven and prepare a casserole dish

Preheat the oven to 375 ˚F and grease a 9 by 9 inch casserole dish.

Assemble the casserole base

Place the bagel pieces, 1 chopped bell pepper, ¾ cup of cherry tomatoes and 6 chopped slices of bacon into the casserole dish.

Make egg mixture

Whisk 6 large eggs, 1 cup of milk, 1 cup of cheese, ½ a teaspoon of ground mustard, ¼ teaspoon of salt and ⅛ teaspoon of pepper together in a large mixing bowl.

Add egg mixture to dish

Pour the whisked egg mixture over the ingredients in the dish.

Add cream cheese and everything bagel seasoning on top

Dot the top of the casserole evenly with cubes of cream cheese. Sprinkle everything bagel seasoning over the top.

Bake

Bake the casserole in the oven for 45 minutes or until the center is set and the edges are a light golden brown color.

Remove from the oven and leave to cool for 10 minutes.

Serve slices of this casserole garnished with chopped scallions.
