Baileys Chocolate Coffee Cake

I am a huge fan of liquor in baking and this Baileys Chocolate Coffee Cake recipe is one of my first choices. Made with a dense, moist cake batter with a layer of coffee, cocoa and granulated sugar and covered in a coffee and melted chocolate topping. If the Bailey’s doesn’t win over your heart then the coffee-chocolate combination definitely will.

To make Baileys Chocolate Coffee Cake, you will need the following ingredients:

Ingridiens for Baileys Chocolate Coffee Cake

Steps to make Baileys Chocolate Coffee Cake

1

Preheat oven and prepare baking pan

Preheat the oven to 350 °F and grease a 9x13-inch loaf pan with cooking spray.

2

Prepare filling

2

In a medium bowl, whisk ½ cup of brown sugar, 1½ teaspoons of cocoa powder and ½ teaspoon of instant espresso powder until combined.

3

Prepare batter

5

In a large bowl, beat ¾ cup of softened butter with 1 cup of granulated sugar, ⅓ cup of brown sugar and 2 teaspoons of baking powder until combined and smooth.

4

Add eggs

2

Beat in 3 eggs, 1 egg at a time.

5

Add wet ingredients

2

Pour in ⅔ cup of sour cream, 1 cup of whole milk and ¼ cup Baileys and mix again until combined.

6

Add flour

3

Gradually add 3 cups of all-purpose flour while continuously mixing until combined.

7

Prepare cake

5

Transfer half the batter into the prepared baking dish, then sprinkle an even layer of filling over, and finally top with the remaining half of batter.

8

Prepare topping

2

In a medium bowl, whisk ¾ cup of granulated sugar, ¾ cup of all-purpose flour, 2 teaspoons of cocoa powder, ¾ teaspoon of espresso powder and a pinch of salt until combined.

9

Add butter

2

Pour in 4 tablespoons of melted butter and stir to mix through and combine.

10

Top cake

2

Evenly scatter the prepared topping over batter.

11

Bake

1h

Bake in the preheated oven for about 1 hour or until baked and a wooden toothpick inserted into the center comes out clean.

12

Serve

Once baked, drizzle melted chocolate over the cake and cool for 10-15 before slicing and serving.

Thanks so much, this took a while to make and I didn't have all the ingridents so I had to replace a few things but in the end it was really good.

Coffee in the cake made it taste a bit like dirt, so I wasn't really a fan. My husband on the other hand enjoyed it very much.

Was super dry so I decided to add some caramel topping instead of chocolate because there was already plenty of that, was really good afterwards.

Tamia Wead

Brought the leftovers to work so I can enjoy it for dessert along with some classic wedged salad for lunch.

Make sure to use unsalted butter or the coffee cake will turn out slightly bitter. Very good recipe though.
