The recipe serves four, but it can easily be doubled or tripled for more guests. Start by mixing together a knob of softened butter and fresh parsley in a small bowl and mixing together the breadcrumbs and grated Parmesan in a shallow dish. Next, use a meat mallet to pound the chicken thin. Once the chicken is prepped, season it with salt. If using prosciutto instead of cooked ham, it is better not to add any salt since prosciutto is already salty enough. Spread each slice of chicken with butter parsley mixture, top with ham or prosciutto and a slice of cheese, then roll up and secure with a toothpick. Finally, toss the chicken roll-ups in breadcrumb mixture to coat and place on a baking dish. Top the chicken roll-ups with any leftover breadcrumb mixture and sprinkle with a pinch of salt.
