Position the oven rack in the lower third (just below the center) of the oven. Heat your oven to 350 °F / 175 °C. Line a 2-lb/ 900-g loaf pan with parchment paper.
In a large mixing bowl, add 1 ½ cups mashed bananas, ¼ cup vegetable oil, ⅓ cup and 2 teaspoons almond milk, 2 teaspoons lemon juice, and ½ cup and 2 tablespoons coconut sugar and mix well.
In a small bowl, add 1 ½ cups buckwheat flour or gluten-free flour, 1 teaspoon baking powder, ¾ teaspoon baking soda, and 1 ½ teaspoon cinnamon and mix to combine.
In three batches, add the dry ingredients to the wet ones, mixing well after each addition.
