We’ve all heard of banana bread, but my favorite recipe at the moment is Blueberry Bread. This recipe is simply bursting with flavor and juiciness from the blueberries. I’ve written this recipe with an optional glaze, and while the bread is delicious as it is, I always add the glaze as it raises this blueberry bread from tasty to mind-blowing!
To make this delicious loaf, start by mixing sugar, flour, baking powder and salt. In a separate bowl, beat eggs, milk and oil. Combine the wet and dry ingredients until just moist and add the magic ingredient: blueberries. Bake for an hour and as it cooks, make a glaze by mixing butter, sugar, vanilla and cream. If you decide not to use a glaze, simply sprinkle sugar on top before you put it in the oven.
To make Blueberry Bread, you will need the following ingredients:
Preheat the oven to 350 °F. Grease a loaf pan.
In a large bowl, combine 1 cup of sugar, 2 cups of flour, 1 tablespoon of baking powder and ½ a teaspoon of salt.
Place 1 egg, 1 cup of milk and ⅓ cup of vegetable oil in a bowl and beat until fully combined.
Carefully combine the wet and dry ingredients until just moist. Fold in 1 cup of blueberries.
Place the batter in the loaf tin leaving 1½ inches below the top. Bake in the preheated oven for 50-60 minutes until risen.
Remove the loaf from the oven and allow it to cool on a wire rack for 10-15 minutes before removing it from the pan.
Combine 3 tablespoons of melted butter with 1½ cup of powdered sugar, 1 teaspoon of vanilla and 1½ teaspoons of heavy cream in a small saucepan. Heat gently and pour over blueberry loaf.
Serve with a cup of your favorite tea or coffee.
