These blueberry muffins are my new go-to summer recipe. Not only because they are extremely tender and fluffy, but also because they are so quick and easy to make. They are practically mess-free. You will need one large bowl for mixing the batter and the small one to whip up a cream cheese filling. The recipe calls for fresh blueberries, but if you decide to use frozen, do not thaw them. And make sure to add the frozen blueberries to the muffin batter just before baking. And the best part? You can serve these muffins warm! Enjoy!
To make the Blueberry Cream Cheese Muffins, you will need the following ingredients:
Preheat the oven to 375 °F and line a 12-cup muffin pan with paper liners.
In a bowl of a stand mixer, cream ½ cup butter with ½ cup sugar and ½ cup brown sugar for about 1 minute.
Add 2 eggs one at a time, beating on low after each addition. Then add in 1 teaspoon vanilla extract, ½ cup sour cream, and ¼ cup milk and whisk to combine.
Scrape down the sides of the bowl and stir in 2 cups all-purpose flour, 1 ½ teaspoons baking powder, and ¾ teaspoon salt. Don’t overmix.
Fold in 1 ½ cups blueberries. Mix until just combined.
In a small bowl, stir together 4 ounces cream cheese, 2 tablespoons sugar, and 1 egg yolk.
Fill the muffin cups about ⅓ full. Using the back of a spoon, flatten the batter and make an indentation in the center.
Add 2 teaspoons of the cream cheese filling.
Spoon another dollop of batter on top of the cream cheese filling.
Bake for 22 to 25 minutes or until the skewer inserted in the center comes out barely clean.
Once baked, let cool in the muffin pan for 5 minutes and then transfer to a wire rack. Repeat steps 7 to 10 for the remaining batter and cream cheese filling.
Serve warm or at room temperature and enjoy!
