These Korean Braised Potatoes – Gamja Jorim are one of my favorite side dishes. This recipe is so versatile. It can be made as directed or simply with just potatoes. You can use many other vegetables of your choice, such as red/orange bell pepper, scallions, garlic cloves, or mushrooms.
To make this delicious potato side dish, start by sauteing potatoes for a few minutes. Add braising liquid and bring to a boil. Add carrot pieces and simmer until the potatoes are almost cooked through – they should be firm, not mushy. Add green peppers and onion and boil until the sauce is reduced and slightly thickened. The potatoes will continue to soak up the sauce even after being cooked. Mix in sesame oil and serve garnished with sesame seeds.
To make Korean Braised Potatoes – Gamja Jorim, you will need the following ingredients:
Peel 1 ½ pounds of potatoes and cut into 1-inch cubes. Chop 1 carrot, chili peppers, and ¼ onion into large chunks.
In a small bowl, combine 3 tablespoons of soy sauce with 1 tablespoon of sugar, 1 tablespoon of rice wine, 1 tablespoon of corn syrup, 1 teaspoon of minced garlic, a pinch black pepper, ¾ cup of water and stir well.
Saute the potatoes in a non-stick pan with 1 tablespoon of cooking oil over medium heat for 4 - 5 minutes. Stir occasionally as the potatoes cook to avoid sticking to the pan.
Add the braising liquid and bring it to a boil over high heat.
Drop the carrot pieces into the braising liquid. Cover and reduce the heat to medium. Simmer for about 5 - 6 minutes until the potatoes are almost cooked through, firm but not mushy.
Stir in the green pepper and onion pieces, and continue to boil (without the lid) for about 3 minutes until the sauce has reduced and thickens slightly.
Before serving, stir in 1 teaspoon of sesame oil and sprinkle with sesame seeds.
