There is nothing my kids love more than banana bread and this Brilliant Banana Loaf is their favorite cake. This recipe is like a cross between banana bread and a drizzle cake. It is a great recipe to make when you have a lot of overripe bananas in your fruit bowl. It is sweet and rich and delicious!
It couldn’t be easier to make this loaf. Cream butter and sugar until light and fluffy. Add beaten egg and fold in the flour, baking powder and 2 mashed bananas. Bake in the preheated oven and cool on a wire rack. As the cake cools, make a runny icing. Drizzle the icing over the top of the cake and decorate with a handful of banana chips. Enjoy with a cup of coffee.
To make Brilliant Banana Loaf you will need the following ingredients:
Preheat the oven to 355 °F. Lightly grease a loaf pan with butter and line the base and sides with parchment paper.
Place 140 grams each of butter and caster sugar in a large bowl. Use a large wooden spoon or handheld mixer to cream the butter and sugar.
Slowly add 2 beaten eggs and a little bit of flour. Mix until fully incorporated.
Mix in the remaining flour. Add 1 teaspoon of baking powder and 2 ripe mashed bananas. Mix until fully incorporated.
Transfer the cake batter to the prepared loaf pan. Bake the cake in the oven for approx 30 minutes until a toothpick inserted comes out clean.
Remove the loaf from the oven and cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Mix icing sugar with 2-3 teaspoons of water. When you have a runny icing, drizzle it across the top of the loaf.
Decorate with banana chips and serve with morning coffee.
