Inspired by the viral TikTok trend, this Butternut Squash Feta Pasta is a weeknight dream. It’s easy, creamy and made from just a few scratch ingredients. Caramelized butternut squash, roasted garlic, creamy feta, baby spinach, and thyme give this pasta tons of flavor. Plus, this pasta is after-work fast and ready on the table in minutes.
Start by roasting the butternut squash, whole head garlic, and feta cheese with olive oil and thyme. In the meantime, cook the pasta, reserving some of the pasta cooking water. Once the butternut squash is tender and caramelized, peel the garlic, then mash and stir it through the butternut squash. Top the dish with spinach, then add the cooked pasta and about ¼ cup of pasta water. Toss well to combine, adding more pasta water if needed. Serve immediately, garnished with toasted walnuts and chili flakes if you wish.
To make the Butternut Squash Feta Pasta, you will need the following ingredients:
Preheat the oven to 400 °F.
To an oven-safe dish, add the diced butternut squash and 1 garlic head with the top cut off. Season with salt and black pepper to taste. Sprinkle with thyme leaves, reserving some for feta. Drizzle with olive oil, reserving 1 tablespoon for feta. Toss to coat.
Add the block of feta in the center of the dish and arrange the butternut squash around it evenly. Season the feta with the reserved thyme leaves and olive oil.
Bake for 25 minutes until the butternut squash is cooked and the feta has softened.
In the meantime, cook 8 ounces pasta according to the package instructions. Drain the pasta, reserving about 1⁄2 cup of pasta cooking water.
Remove the baking dish from the oven and gently peel the garlic cloves. Use a fork to mash the garlic cloves in the same dish. Break up the feta cheese and stir it into the mixture.
Top the butternut squash mixture with the spinach. Immediately top the spinach with the cooked pasta and a good splash of hot pasta cooking water. Mix well to make a creamy sauce. Add more pasta cooking water if the pasta is too dry.
Garnish with chili flakes and chopped walnuts, if using, and serve right away. Enjoy!
