I love baking my own bread, and this Caramelized Onion & Spinach Olive Oil Quick Bread is my personal, favorite choice. It’s almost as easy and quick as baking a cake. This recipe does not require time for allowing the dough to rise, which means the prep time is just minutes.
I combine olive oil, garlic, onion, spinach leaves and mizithra, or you can use feta, for the filling, and it’s delicious! Pair it with a soup, or eat it as is, this crumbly, flavorsome bread is the best!
To make Caramelized Onion & Spinach Olive Oil Quick Bread, you will need the following ingredients:
Preheat the oven to 350 °F.
In a large skillet, set over medium heat, heat 2 tsp olive oil. Add the onions and season with ½ tsp salt. Cook for 10 minutes. Reduce the heat and cook a further 10 minutes, until the onions are golden brown.
Add 1 tsp olive oil to the onions, and then stir in the garlic and spinach leaves. Stir for about 1 minute, until the spinach is wilted and bright green. Remove from the heat.
In a medium bowl, whisk together the flour, baking powder and salt.
In a large bowl, combine the eggs, milk and extra virgin olive oil. Whisk well until well combined.
Pour the flour mixture into the wet mixture and stir until well combined. Try to not overmix, or the dough will become tough.
Add the spinach mixture and mizithra cheese, and stir until well combined.
Butter a loaf, baking pan. Spoon 1 tbsp flour into the pan and tap the flour around the pan, shaking out the excess. Scoop the batter into the pan and smooth the top.
Bake for about 35-40 minutes, until the top is light, golden brown and a wooden skewer inserted into the center comes out dry.
Leave to cool for 15 minutes on a wire rack.
Slice and serve!
