To make Cheese Puffs with Ham Salad, you will need the following ingredients:
Preheat oven to 450 °F.
In a small bowl, whisk the flour, salt, dry mustard and cayenne pepper until combined.
In a medium saucepan over medium-high heat, bring water and butter to a boil, stirring, until butter is melted. Remove from heat.
Add dry ingredients and stir vigorously until well combined, smooth and thick.
Transfer to a large bowl to sit for 3 minutes.
Using an electric mixer on low speed, beat dough for about 1 minutes until no longer steaming and just warm enough to touch.
Add eggs on a medium-high speed, 1 at a time, until dough is smooth and creamy.
Add cheese and beat again until combined.
Line a baking sheet with baking parchment paper and portion 1 tablespoon of dough per puff onto the baking sheet, about 1-inch apart.
Bake in preheated oven for 10 minutes. Reduce heat to 350 °F and bake for a further 15-20 minutes until puffed, deep golden brown and dry to touch. Also to cool for 3 minutes before slicing open with a serrated knife.
In a medium, mixing bowl, whisk the cream cheese, scallions, parsley, Creole mustard, cayenne pepper, and black pepper together. Fold in 8 ounces of ham.
Spoon about 1 tablespoon of the prepared ham salad into each cheese puff, and close.
Serve warm or at room temperature.
