Ingredients

For the Cheese Puffs:
1 cup All-purpose flour
½ tsp Kosher Salt
½ tsp Mustard powder
½ tsp Cayenne pepper
1 cup Water
½ cup Butter unsalted
4 Large eggs at room temperature
6 ounces Gruyère cheese grated (about 1½ cups)
For the Ham Salad:
8 ounces Ham smoked fully cooked , finely chopped
4 ounces Cream Cheese at room temperature
2 Scallions finely chopped
2 tbsp Parsley fresh flat-leaf , finely chopped
1 tbsp Creole Mustard
¼ tsp Cayenne pepper
¼ tsp Black pepper

These Cheese Puffs with Ham Salad are sandwich-like rolls and a great lunch or tea-time option to serve your guests.

I have included the recipe for making fresh, homemade cheese puff rolls using mustard, cayenne pepper and Gruyere cheese in the filling, making these more of a dish for a palette which doesn’t mind a bit of a kick.

Steps to make Cheese Puffs with Ham Salad

Preheat oven

Preheat oven to 450 °F.

Combine dry ingredients

In a small bowl, whisk the flour, salt, dry mustard and cayenne pepper until combined.

Boil water and butter

In a medium saucepan over medium-high heat, bring water and butter to a boil, stirring, until butter is melted. Remove from heat.

Add dry ingredients

Add dry ingredients and stir vigorously until well combined, smooth and thick.

Rest

Transfer to a large bowl to sit for 3 minutes.

Beat dough

Using an electric mixer on low speed, beat dough for about 1 minutes until no longer steaming and just warm enough to touch.

Add eggs

Add eggs on a medium-high speed, 1 at a time, until dough is smooth and creamy.

Add cheese

Add cheese and beat again until combined.

Portion puffs

Line a baking sheet with baking parchment paper and portion 1 tablespoon of dough per puff onto the baking sheet, about 1-inch apart.

Bake

Bake in preheated oven for 10 minutes. Reduce heat to 350 °F and bake for a further 15-20 minutes until puffed, deep golden brown and dry to touch. Also to cool for 3 minutes before slicing open with a serrated knife.

Prepare ham salad

In a medium, mixing bowl, whisk the cream cheese, scallions, parsley, Creole mustard, cayenne pepper, and black pepper together. Fold in 8 ounces of ham.

Fill puffs

Spoon about 1 tablespoon of the prepared ham salad into each cheese puff, and close.

Serve

Serve warm or at room temperature.
