These Chocolate Covered Strawberries are a winner with everyone from kids to adults. I dare say it is the easiest bite-sized dessert that will disappear in no time. Indulge your sweet tooth in a healthy way, and get the kids involved in the fun! Once you’ve melted the chocolate, let the kids help dip the strawberries and let them be creative. 

First things first: make sure the strawberries are well-rinsed and patted dry with a paper towel. Now, melt the chocolate. You can melt the chocolate on the stovetop or in the microwave. I find it easier to use the microwave in this recipe. When microwaving the chocolate, make sure you use around 30-50% power to avoid the chocolate hardening when it melts. Microwave in 30-second intervals, stirring in between, until completely melted. Once the chocolate is melted, dip the strawberries and lay on the baking sheet. Refrigerate until the chocolate is completely set. Enjoy!

Steps to make Chocolate Covered Strawberries

Prepare baking sheet and rinse strawberries

Line a large baking sheet with wax or parchment paper. Rinse the strawberries well and pat dry with paper towels.

Melt chocolate

In a microwave-safe bowl, heat 2 cups semisweet chocolate chips and 2 tablespoons coconut oil, stirring every 30 seconds, until smooth and fluid.

Dip strawberries in chocolate

Holding a dry strawberry by the stem, dip it in the chocolate, allowing the excess to drip back, then place them on the prepared baking sheet. Repeat with the remaining strawberries.

Refrigerate

Transfer the strawberries to the fridge until the chocolate is set, about 30 minutes.

Serve

Serve and enjoy! The strawberries are best eaten the day they are made. Keep refrigerated until serving time.
