To make Coffee-Walnut Snack Cake, you will need the following ingredients:
Preheat the oven to 350 °F. Lightly grease and flour an 8-inch round pan.
Finely chop ½ cup of the walnuts using a food processor or chopper and set aside.
Combine 1½ cups of all-purpose flour, 1 teaspoon of baking powder and ¼ teaspoon of salt together in a bowl and mix until fully incorporated.
Beat 1 stick of butter and 1 cup of sugar together using an electric mixer until they are light and fluffy for 2-3 minutes.
Beat in two large eggs, one at a time, beating well after each addition.
Mix ⅓ of cup milk with 3 tablespoons of espresso or coffee.
Turn the mixer to low speed. Gradually add the flour mixture into the creamed mixture, alternating with the coffee mixture. Blend well.
Fold in the finely chopped walnuts.
Spread the cake batter in the cake pan.
Bake in the oven for 30-40 minutes until the cake springs back when lightly touched with a finger and a toothpick inserted in the center comes out clean.
Place the baking pan on a wire rack and leave to cool for 10 minutes. Remove from the pan and leave to cool completely on the wire rack.
As the cake cools, blend 1½ cups of confectioners' sugar with 2 tablespoons of butter and 3 tablespoons of cream cheese. Mix in 2-3 teaspoons of strong espresso or coffee, 1 teaspoon at a time, until the frosting becomes fluffy and spreadable. Add more confectioners' sugar if it becomes too watery.
Chop the remaining ¼ cup of walnuts coarsely.
Spread frosting over the top and sides and sprinkle the chopped walnuts over the top of the cake before serving.
