Wood Ear mushrooms are known to be very healthy for ones digestive system as well as am infamous mood food to boost those happy feelings! The dressing is a fresh, oriental flavored combination of lime juice, soya sauce, sesame oil, ginger, chili and sesame seeds.

To make Chilled Cucumber and Wood Ear Mushroom Salad, you will need the following ingredients:
Soak mushrooms in water until hydrated, 15 to 20 minutes.
In a saucepan over medium heat; boil mushrooms in clean water, for 2 minutes. Drain and let cool.
In a bowl, combine the lime juice, soya sauce, sesame oil, ginger, sugar, and chili pepper.
Toss the salad dressing with cucumber, mushrooms, and sesame seeds. Allow to chill in the refrigerated for at least 1 hour before serving.
Serve chilled!
