To make Double Chocolate Banana Bread, you will need the following ingredients:
Preheat the oven to 350 °F. Grease and line a 9-inch loaf pan with butter and parchment paper. Press the paper into the loaf pan. Ensure the bottom and sides are covered and leave about an inch overhang on the long edges.
In a large bowl, mix 1¼ cups all-purpose flour, ½ a cup of cocoa powder, 1 teaspoon of baking powder, ½ a teaspoon of baking soda and ¼ teaspoon of salt until fully combined.
Mash 2 large bananas in a separate mixing bowl.
Add 2 large eggs, ½ a cup of granulated sugar, ½ a cup of packed light brown sugar and 1 teaspoon of vanilla extract to the banana and mix well.
Whisk in half a cup of melted butter.
Add the wet ingredients to the flour mixture and mix until just incorporated. Fold in chocolate chips.
Transfer the chocolate banana bread mixture to the prepared loaf pan and sprinkle 2 tablespoons of cacao nibs on top. Bake in the oven for 50-60 minutes until a skewer inserted comes out clean.
Place the loaf tin on a wire rack and leave until almost completely cooled. Lift the loaf from the tin using the overhanging paper.
