These Eggless Sugar Cookies are delicious rich buttery sugar cookies that are perfect to make for anyone who can’t eat eggs. One of my kids has an allergy to eggs, so it can be really difficult to find things to bake that suit the whole family. This recipe is perfect.
Start by combining dry ingredients in a bowl. Cream butter and sugar in a bowl and add vinegar and vanilla extract. Stir in the dry ingredients. The key thing about this recipe is you don’t want the dough to be too sticky, and you don’t want it to be too dry. If it is too wet, you can add a few tablespoons of flour until you get the right consistency. Cut out cookies and bake in the oven until light golden brown. Leave to cool before devouring or storing in an airtight container.
To make Eggless Sugar Cookies, you will need the following ingredients:
Preheat the oven to 350 °F and line a baking sheet with parchment paper.
Combine 1¼ cups of all-purpose flour, ½ a teaspoon of baking soda, and ½ a teaspoon of salt in a large bowl.
In a separate bowl, beat ½ a cup of white sugar and ½ a cup of butter together using an electric mixer for about 2 minutes until creamed and fluffy.
Add 1 teaspoon of vanilla extract and 1½ teaspoons of vinegar and keep mixing until fully combined.
Gradually add the dry ingredients, a little at a time, to the mixing bowl with the creamed mixture. Slowly mix together until just combined. If the dough is dry, add 1 tablespoon milk. If it is still dry, add another ½ a tablespoon and stir.
Place the dough in the refrigerator for half an hour or an hour if it is not firm enough.
Roll the dough out on a floured work surface until it is ½-inch thick. Cut out cookies using a cookie cutter and place them on the prepared baking sheet.
Bake in the oven for 8-12 minutes until light golden brown on top.
Transfer to a wire rack and leave to cool for 10 minutes.
Serve immediately with tea or coffee or store in an airtight container until you are ready to eat them.
