This French Coffee Plum Cake is a recipe I learned when I was on vacation in France one summer. It is a super simple yet super delicious cake made from whole wheat flour. If you have ever been to France, you will know that they make the most delicious cakes. The secret to making these at home is down to one simple ingredient: butter.
Start by making a cake batter using whole wheat flour. Prepare your plums by washing them under cold water. Cut each one in half and remove the stones. Place the plum halves on top of the cake batter. Make sure they are close together with the inside facing upwards, but do not press them right into the batter. Bake the cake for about 25 minutes. Cool a while before cutting.
To make French Coffee Plum Cake, you will need the following ingredients:
Preheat the oven to 400 °F and lightly grease a baking pan with butter.
Place 2 sticks of butter in a large mixing bowl with 1½ cups of sugar and beat until light and fluffy.
Add four eggs to the creamed butter and sugar, one at a time, beating well between additions. Gently pour in ½ a cup of milk and beat until smooth.
In a separate bowl, mix 2 teaspoons of baking powder with 2½ cups of whole wheat flour.
Whisk the dry ingredients into the wet ingredients gently to preserve as much air as possible. Transfer the batter to the baking pan.
Wash the plums under cold water. Cut each one in half and remove the stone. Place each half on the surface of the batter with the inside facing upwards.
Bake in the preheated oven for about 25 minutes until a toothpick inserted comes out clean.
Serve large slices of this cake while it is still slightly warm from the oven.
