I rarely make desserts because they take so much time but this Fresh Cherry Galette recipe is an exception I love to make. I save time by using store bought pie dough to make the galette. It is so easy and I don’t worry about the shape – I just let the dough do its thing!
To make this, I first prepare the galette by cutting the rolled dough into a circle. Then I mix the cherries with sugar, lemon rind and juice to make the filling. I use sweet cherries like Rainier cherries for this galette. If you choose to use more tart or bitter cherries add an extra tablespoon of sugar to the cherry filling.
To make Fresh Cherry Galette, you will need the following ingredients:
Preheat the oven to 400 °F and line a baking sheet with parchment paper.
In a small bowl, stir the cornstarch and 1 tablespoon sugar together with a whisk.
Place the rolled out dough on the parchment. Cut it to a 12 ½ inch disc. Sprinkle the center with the cornstarch/sugar mixture. Leave a 2 inch border around the edges.
Mix the cherries with the remaining 2 tablespoons of sugar, lemon rind and lemon juice. Stir well until fully combined.
Place the cherry mixture on the center of the dough. Leaving the 2-inch border free. Fold the border inwards over the cherries. It will partially cover the filling but the center will be exposed. Press the edges gently to seal.
Brush the pastry edges with the buttermilk. Sprinkle a dusting of turbinado sugar over the galette (cherries and dough).
Bake for 25 minutes until the filling starts to bubble and the pastry is lightly browned around the edges.
Leave to cool for around 20 minutes, then serve as it is or with ice cream.
