To make Fresh Strawberry Cake, you will need the following ingredients:
Preheat the oven to 360 °F. Line a 9x13-inch baking pan with parchment paper.
Beat 3 egg whites to stiff peaks in a large mixing bowl.
In a separate bowl, add ½ a cup of granulated sugar and 1 teaspoon of vanilla extract to the 3 egg yolks and beat with an electric mixer until light and fluffy.
Mix ⅔ cup of flour, 1 tablespoon of cornstarch, 1 teaspoon of baking powder, 1 pinch of salt and slowly add to the egg yolk mixture and mix until fully combined.
Carefully fold the egg whites into the cake batter until it looks smooth.
Transfer the cake batter to the prepared baking pan and bake for 20 minutes until light golden brown on top.
Spread 6 tablespoons of strawberry jam over cake when hot out of the oven. Leave the cake cool on a wire rack.
Beat 12 ounces of cream cheese in a large mixing bowl until creamy. Pour in 1 cup of heavy whipping cream and add 6 tablespoons of icing sugar or more to taste and 1 tablespoon of vanilla sugar and beat for 3-4 minutes on high speed until the cream is light and fluffy.
Carefully spread the cream layer over the top of the cooled cake. Place the cake in the refrigerator and chill for 30 minutes.
Follow the package directions to prepare the jello. Leave the jello to cool a bit, but it must be still runny.
Arrange 1 pound of sliced strawberries on top of the cream layer.
Pour jello over the strawberries and place in the refrigerator to chill until set.
Serve large chilled slices of this cake on a hot day.
