This German Damson Plum Cake is a delicious tray bake topped with a buttery nutty streusel. There is a bit of work involved in washing, drying and pitting the plums, but the prep time is worth it! Remove the stone from the plums using a sharp knife. To do this, cut each plum on the side along the stone, but take care not to half them completely.
To make the cake, start by making the streusel from sugar, butter and vanilla. When the streusel comes together, add sliced almonds and ground cinnamon. Next, make dough using curd cheese. Transfer the dough to the baking pan and top with the plums. Sprinkle the streusel over the top and add coarse sugar if you like. Bake in the oven and enjoy warm. Serve with ice cream or custard.
To make German Damson Plum Cake, you will need the following ingredients:
Mix 1¼ cups of flour, ½ a cup of sugar, 1 teaspoon of vanilla extract and ⅔ cup of butter cubes using your fingers. When you have large lumps, add 3 tablespoons of sliced almonds and ¼ teaspoon of cinnamon and stir. Place the streusel in the fridge until needed.
Place 8.8 ounces of curd cheese in a large bowl with ½ a cup of sugar, 6 tablespoons of milk, 3 tablespoons of vegetable oil, 2 teaspoons of vanilla extract and 1 egg. Mix until well combined.
In a separate bowl, combine 3 cups of flour with 3 teaspoons of baking powder and ¼ teaspoon of salt. Add the dry ingredients to the bowl and knead well until the dough comes together and is quite soft.
Preheat the oven to 390 °F. Lightly grease and line a large deep baking sheet with cooking spray and parchment paper.
Transfer the dough to a floured surface. Roll it out to the size of the baking sheet. Transfer the rolled out dough to the baking sheet. Don’t worry if the dough is very soft, press it into shape in the tin.
While the plums are still connected at one point, open them up like butterflies. Arrange them together on the dough with little space between them.
Scatter the streusel evenly over the plums and sprinkle with coarse sugar.
Bake in the oven for 25-35 minutes until a toothpick inserted in the center comes out clean.
Remove from the oven and leave to cool in the pan.
Serve warm with tea or coffee. It tastes great as it is, but you could add some ice cream or custard if you like.
