I love everything with grapefruit and this Grapefruit Greek Yogurt Cake tastes as beautiful as it looks. My kitchen trick to baking a cake that turns out extra moist and creamy is by adding Greek yogurt to the recipe. If you have pink grapefruit at your local supermarket and they’re in season then this is the perfect recipe to experiment with. Simple steps for a smooth baking experience!
To make Grapefruit Greek Yogurt Cake, you will need the following ingredients:
Preheat the oven to 350 °F and grease a 9×5-inch loaf pan.
In a large bowl, whisk 1½ cups flour, 1½ tsp baking powder and ½ tsp salt together until combined.
In a clean bowl, beat 3 large eggs together.
Add ¾ cup Greek yogurt, 1 packed cup of brown sugar, ½ cup oil of your choice, ¼ cup freshly squeezed grapefruit juice, 1½ tablespoon grapefruit zest, 1 teaspoon vanilla extract. Whisk until combined.
Pour the wet ingredients into the bowl of dry ingredients and whisk until just combined and do not over mix.
Transfer batter to prepared loaf pan and smooth over the top. Bake in preheated oven for about 45-50 minutes until a wooden toothpick inserted into the center comes out clean. Remove from oven and transfer to a wire rack to cool completely.
In a small mixing bowl, whisk 1 cup confectioners’ sugar, 2 tablespoons freshly squeezed grapefruit juice and ½ teaspoon vanilla extract. Drizzle prepared glaze over the completely cooled cake.
Slice, serve and enjoy!
Store at room temperature or in the fridge for up to 5 days, if there are any leftovers!
