We’re going Mexican with this sweet and tangy Grilled Pineapple Salsa that’s a little bit spicy with a perfect bite. It’s a bonanza bowl-full of char-grilled. Pineapple pieces are brushed and cooked on a grill until lightly charred then tossed with salsa salad ingredients such as chopped peaches for sweetness and jalapeño and red onions for spice and flavor. Finish the salsa with lime juice, kosher salt and fresh cilantro for authenticity.
To make Grilled Pineapple Salsa, you will need the following ingredients:
Preheat a grill or grill pan to medium-high heat.
Generously brush all sides of chopped to 1-inch, pineapple pieces with olive oil.
Grill for a few minutes until evenly charred on all sides. Allow to cool before chopping into bite-sized pieces.
In a mixing bowl, toss the grilled pineapple pieces, 2 chopped peaches, 1 minced jalapeño, ½ a chopped red onion and the juice from 1 lime. Season with salt, to taste.
Garnish with cilantro for serving and enjoy!
