This Italian Cheese Log is super festive and simple to make. Even better, it is a flavor sensation and it’s a fantastic alternative to expensive store bought cheese platters. If you don’t have any Italian seasoning, you can make your own by mixing ½ a teaspoon each of thyme, oregano, basil, rosemary, black pepper.
Making this couldn’t be easier. Simply mix all of the ingredients together in a large bowl and transfer to a loaf pan and chill until close to serving time. You can make this up to a week in advance. To serve, place strips of sundried tomato on top of the cheese log and garnish with parsley and sprigs of rosemary. Scoop up chunks of cheese with crackers and enjoy!
To make Italian Cheese Log, you will need the following ingredients:
Spray a loaf pan with cooking spray and line with plastic wrap. Make sure the sides of the plastic wrap hang over the edge of the tin.
In a large bowl, mix 1 pound of softened cream cheese, ⅓ cup of sour cream, 1 teaspoon of Italian seasoning, 1 teaspoon each of garlic powder, salt, red pepper/chilli flakes, 2 cups of freshly grated Cheddar, 9 ounces of roasted peppers, drained and finely chopped, 6 ounces of finely chopped salami, ¾ cup of finely chopped green olives and ⅓ cup of finely minced green onion.
Transfer the cheese log mixture to a loaf pan and smooth the surface. Press to remove air pockets.
Cover with the overhanging plastic wrap and chill in the refrigerator for at least 4 hours or up to 1 week.
Transfer the cheese log to your favorite serving platter and peel away the wrap.
Top the cheese log with strips of sun dried tomato and drizzle over some of the extra oil.
Serve garnished with parsley and rosemary sprigs. Scoop up the cheese with crackers.
