Melt butter

In a small light-colored saucepan, melt 4 tablespoons unsalted butter over medium heat.

Cook butter

Continue cooking, occasionally scraping the bottom and sides of the pan with a rubber spatula, until the butter foams, turns a deep golden brown, and becomes fragrant and nutty, about 3 to 4 minutes more. Watch closely to make sure the butter doesn't burn.

Strain brown butter

Immediately pour the brown butter through a sieve into a small heatproof bowl.

Prepare lemon butter sauce

Add 1 tablespoon lemon juice and a pinch of salt and black pepper and stir to combine. Taste and adjust lemon and salt if needed. Set aside.

Season fish fillet

Pat the fish fillet dry using paper towels. Sprinkle the fillets with salt and black pepper, then flour. Use your fingers to spread flour. Turn over and repeat. Shake the excess flour off well.

In a nonstick skillet over high heat, heat 2 tablespoons oil. When the oil shimmers, add the fish fillet. Cook for 1 ½ minutes until golden and crispy on the edges, then turn over and cook the other side for another 1 ½ minutes. Add 1 to 2 minutes to the cooking time if you have thicker fillets.
